At Chocapothecary, we use a very special kind of Turkey Tail mushroom. Whereas we source all our other mushrooms in the form of organic hot water fruiting body extracts, our Turkey Tail is sourced in the form of organic mycelium. (The fruiting body is the part of the mushroom you can see and eat, and the mycelium is the “root network” of the mushrooms—the underground intelligence connecting all life in the forest.)
Mycelium vs. Fruiting Body
Now, you might have heard some things about mycelium not being the ideal part of the mushroom that you would want, and that you should stick to fruiting body extracts. Especially with mushrooms, you want an extract, because raw mushrooms contain Chitin (an indigestible carbohydrate) that is broken down when cooking mushrooms. This is why some of us do not do all too well with raw, or merely dried and powdered mushroom products.
The Amazing Kind of Mycelium
However, this particular kind of mycelium we source here at Chocapothecary, while also organic, is grown on a fermented brown rice biomass—which is exceptional for several reasons. Keep in mind that when consuming mycelium, you automatically also consume whatever medium it was grown in. So if the mushroom was grown on wood chips or grain, you now end up eating that nasty stuff, which is not necessarily intended for a clean diet.
The fermented brown rice biomass, however, is altered from its original form. The fermentation process effectively reduces phytic acid in brown rice, making it a highly gut-friendly, easy-to-digest food—plus Turkey Tail mycelium! Now that is pretty amazing, isn’t it?
